Tasting notes:
We chose the name “Castrum” as a tribute to “The Castle” located in Castelrotto in Valpolicella. A soft and well-round wine obtained from the best Corvina grape variety laid drying for about 30 days. After a long fermentation in Slavonian oak casks, it has been aged in small French oak casks. A meditation wine with complexity suited to be paired with all meat dishes.
The castrum shows a brilliant ruby red. The intense bouquet is multi-faceted, with notes of ripe fruit and harmoniously integrated roasted aromas. Direct on the palate, with power and density, on present but well-integrated tannins.
